This is from a niece's middle school home ec classes. The variations are endless, so let your imagination run wild.
2 1/4 cups flour
1 tsp baking soda
1 cup butter or margarine
3/4 cup packed brown sugar
1/4 cup granulated sugar
1 pkg (4 serving size) instant pudding
1 tsp vanilla
2 eggs
1 pkg (12 oz) chips
Mix flour with baking soda (set aside). Combine butter, sugars, pudding mix, and vanilla; beat until smooth and creamy. Beat in eggs. Gradually add flour mixture. Stir in chips. Spoon onto ungreased baking sheets, about 2 inches apart. Bake at 375 for 8 to 10 minutes. My favorite pudding/chip combinations: milk chocolate/milk chocolate, chocolate/toffee
This is especially tasty in the fall. Use blackstrap molasses (chock full of some vitamin) and call it
health food.

1 tsp ground cinnamon
1 tsp ground ginger
1 tsp ground cloves
3/4 cup (1 1/2 sticks) butter or margarine, at room temp
1 cup packed brown sugar
1/4 cup molasses
1 large egg
3/4 cup granulated sugar
In medium bowl, combine flour, baking soda, cinnamon, ginger and cloves. In a large bowl, with electric mixer at medium speed, beat butter and brown sugar until pale. Beat in molasses and egg (mixture will look curdled). Gradually beat in flour mixture until blended. Cover and refrigerate 1 hour or until firm enough to handle. Preheat over to 350. Place granulated sugar in small bowl. Shape tablespoonfuls of dough into 1 1/4 inch balls; roll in sugar to coat. Place balls of dough 1 1/2 inches apart on ungreased cookie sheets. Bake 10 - 12 minutes or until tops crack but cookies are still soft to the touch.
Popular with the granola crowd. Don't use craisins or you lose some of the
tarty zest that makes this cookie so unusual.
1/4 cup butter or margarine, at room temp
3/4 cup packed brown sugar
1 egg
1 tsp vanilla extract
1 tbls grated orange peel
pinch of salt
1 1/2 cups flour
1/2 tsp baking soda
1/2 cup chopped walnuts
3/4 cup chopped fresh or thawed frozen cranberries
Preheat over to 375. Beat together butter, brown sugar, egg, vanilla, orange peel and salt until light and fluffy. Add flour and baking soda, beating until well blended. Stir in walnuts. Carefully fold in cranberries. Drop by rounded teaspoonfuls, 2 inches apart, on greased baking sheets. Bake 10 - 12 minutes.
This brownie-like treat has no nutritional value whatsoever but is very
popular with students around finals.
1 14 oz pkg caramels
1 5 fl oz. can evaporated milk
1 18.25 oz pkg German Chocolate cake mix
1/2 cup margarine, melted
1 6 oz. pkg semi-sweet chocolate pieces
1/2 cup chopped walnuts
Melt caramels with 1/3 cup evaporated milk over low heat, stirring until smooth. Combine remaining evaporated milk (1/4 cup), cake mix and margarine; mix well. Press half of cake mixture onto bottom of ungreased 13 x 9 inch baking pan. Bake at 350, for 6 minutes. Sprinkle chocolate pieces and 1/4 cup walnuts over crust; drizzle with caramel mixture. Top with teaspoonfuls of remaining cake mixture; press gently into caramel mixture. Sprinkle with remaining walnuts. Bake at 350, 18 to 20 minutes. Cool slightly; chill. Cut into bars.
These are nice on holidays because you can ice or decorate them with relevant colors and / or sprinkles. Also tasty plain.

2 eggs
1 tsp baking powder
1 tsp soda
1 tsp vanilla
1/2 tsp salt
1 cup sour cream
3 1/2 cups flour
Mix together sugar and shortening. Add eggs, vanilla and sour cream. Add baking powder, soda, salt and flour. Stir till well blended. Drop from spoon onto ungreased baking sheet. Bake at 350 for 15minutes. Frost with sour cream frosting or eat plain.
This is adapted from a recipe called Death by Chocolate. It looked too rich so I toned it down a bit.
1 cup semi-sweet chocolate chips
3/4 cup firmly packed brown sugar
1/4 cup butter or margarine (softened or melted)
2 eggs
1 tsp vanilla
1/2 cup flour
1/4 tsp baking powder
2 cups chopped walnuts
Melt chips (microwave okay). Add in brown sugar and margarine, then eggs and vanilla. Add in flour and baking powder. When dough is smooth add in walnuts. Drop by spoonful onto ungreased baking sheet. Bake at 350 for 12 or 13 minutes.
