Wine Lectures by Frank Deis

In July I will be giving a pair of lectures to a group at University College. I have been working up some handouts for this. It will be very interesting to talk about wine in a scientific context. Here is what I have come up with so far:

• ANAEROBIC -- with no oxygen

• MALOLACTIC -- ferment to lower acidity

• CONTAINERS -- from amphorae to steel vats

• VIGNERON -- wine maker or vine grower?

• OLFACTION -- using our senses

I hope to make some use of Anne C. Noble's "Wine Aroma Wheel"
